500 grams Beef (such as, brisket)
1 Star anise
1 tsp Szechuan pepper
1 pc Cinnamon stick
1 tsp fennel seeds
1 onion
2 carrots
600 grams waxy potatoes
2 centimeters fresh ginger
1 garlic clove
150 grams Snow peas
3 Tbsps soy sauce
2 Tbsps Lime juice
salt

Preparation steps

1.

Rinse the meat and pat dry. Place in a pot with about 2 liters of water (approximately 8 cups) and bring to a boil (the meat must be covered with water).

Add the star anise, peppercorns, cinnamon and fennel and simmer for about 2 hours over low heat.

Remove the meat from the pot and allow to cool, then cut into fine strips.

Pour the broth through a sieve.

Peel the onion and cut into strips. Peel and dice the carrots and the potatoes. Peel the ginger and garlic, cut the garlic into thin slices and grate the ginger finely. Rinse and trim the snow peas and cut diagonally into strips.

Boil about 1 liter of the broth (approximately 4 cups) and add the garlic, ginger, potatoes, onions and carrots. Season with soy sauce, lime juice and salt and simmer for about 15 minutes. Add the snow peas and the meat pieces and simmer together for 2-3 minutes.

Season to taste and serve hot.
