- 2 pcs Dashi Kombu seaweed (seaweed)
- 4 Tbsps Bonito flake
- 4 cups water
- 4 tsps light Miso paste
- 2 tsps Miso paste
- 3 ½ ozs shiitake mushrooms (sliced)
- 1 ½ ozs Silken tofu (diced)
- 2 tsps Wakame seaweed (seaweed used in miso soup)
- To garnish
- fine strips scallions

Preparation steps
1.
Put the dashi and bonito flakes into a pan with the water and bring to a boil. Leave to infuse for 10 minutes, then strain, retaining the liquid.
2.
Stir the miso pastes into the liquid and bring to a boil.
3.
Add the mushrooms, tofu and wakame and return to a boil.
4.
Ladle into bowls and serve garnished with spring onion.
