800 grams waxy potatoes

3 Tbsps olive oil

100 milliliters Whipped cream
2 Tbsps freshly chopped Fresh herbs (i.e parsley, watercress, thyme)
60 grams grated Parmesan
Nutmeg

Preparation steps

Preheat the oven to 200°C (approximately 425°F).

Peel, rinse and slice the tomatoes. Cook the slices in hot oil, stirring occasionally over medium heat for 15 minutes until light, golden brown. Peel the onion and chop finely. Add the onion to the potatoes during the last 5 minutes of cooking. Season with salt and pepper. Beat the eggs with the cream, herbs, half the Parmesan, nutmeg, salt, and pepper.

Sprinkle the potatoes with the remaining Parmesan and let cook in the oven for 20-30 minutes.

Cut the Italian omelette and serve as desired with salad.
