- 250 grams Italian Country bread
- 4 Tbsps black, pitted Olives
- 1 Red onion
- 300 grams yellow and red Cherry tomatoes
- 200 grams Plum tomato
- ½ bunch Basil
- 4 Tbsps olive oil
- 2 Tbsps White vinegar
- salt
- freshly peppers
- 1 Tbsp Caper (freshly ground)

Preparation steps

Preheat the oven to 240°C (approximately 475°F).

Slice bread into 2 cm (approximately 1 inch) thick slices and toast briefly in the preheated oven. Remove, let cool and tear into bite-sized pieces. Drain olives. Peel onion and cut into narrow strips. Rinse tomatoes and cut in half or quarters. Rinse basil, shake dry and pluck off leaves. Mix oil with vinegar in a bowl and season with salt and pepper.

Mix all salad ingredients together in a bowl with the vinaigrette, season to taste and serve immediately.
