Preparation steps

Peel, rinse and quarter both types of potatoes. Cook potatoes in a pot of salted boiling water until tender, about 30 minutes. Drain and let cool slightly. Mash with a potato masher. Rinse, trim and cut cabbage into strips. Blanch cabbage in salted boiling water, about 10 minutes. With a slotted spoon, remove cabbage and drain. Rinse, trim, and slice scallions crosswise. Melt half of the butter in a large pot. Add scallions and sauté, stirring, until translucent. Add milk and heat until warmed.

Combine cabbage, potatoes and remaining butter in a bowl. Gradually stir in hot milk. Mix well and season with salt, pepper, and nutmeg.
