- ½ bunch scallions (sliced)
- 1 garlic clove (finely chopped)
- 1 green pepper (diced)
- ¾ cup Green beans (sliced)
- ¾ cup frozen peas
- 2 cups Tomatoes (peeled and diced)
- ⅔ cup Serrano ham (sliced)
- 2 Tbsps olive oil
- ¼ cup dry sherry
- 8 eggs
- Tabasco sauce
- 8 Tartlet pan (each approx. 12 cm Ø)

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease the tartlet dishes.
2.
Cook the beans and peas together in boiling salt water for approx. 5 minutes. Drain and rinse.
3.
Dry roast the ham in a frying pan until crispy and set aside. Heat 2 tbsp oil in the pan and fry the onion and garlic. Add the pepper, beans, peas, tomatoes and sherry and simmer for a further 4 minutes.
4.
Spread the vegetables and the ham equally between the 4 dishes. Beat the eggs, season with salt, ground black pepper and a dash of Tabasco and pour into the dishes. Bake for approx. 12 minutes.
