Preparation steps

Sort, wash and drain the spinach. Peel and finely chop the ginger. Peel and chop the onion. Wash the chillies and slit one of them lengthwise. Heat the ghee in a pan and sweat the chillies, ginger, onion, coriander and cumin. Add the spinach, cover and cook until it collapses. Stir well, put the lid back on the pan and simmer for about 2 minutes. Season to taste with salt.
