400 grams solid Paneer (Indian cheese)
5 Tbsps sesame oil
1 kilogram young fresh Spinach
1 onion
2 garlic cloves
3 centimeters fresh ginger
2 tsps ground coriander
1 tsp ground Turmeric
1 tsp ground cumin
½ tsp Chili powder
salt
½ tsp sugar
150 milliliters Whipped cream (at least 30% fat)
4 fresh eggs

Preparation steps

Dry paneer slightly and cut into 1-2 cm (approximately 1/2 inch) cubes. Heat the oil in a pan and lightly fry the paneer over medium heat while stirring for about 4 minutes. Remove and set aside. Rinse the spinach, drain well, remove tough stems and chop coarsely. Peel the onion, garlic and ginger and chop finely. In remaining oil, cook the onion, the garlic and ginger. Add coriander, turmeric, cumin and chile powder and cook for about 2 minutes. Add the chopped spinach, cover and cook about 10 minutes over medium heat. Season with salt and sugar, add the cream and paneer and heat to warm all ingredients.

At the same time, poach the eggs in salted water. Spread the spinach and paneer on dishes, top with the poached eggs and serve.
