2 liters fresh Whole milk
75 milliliters lemon juice

Preparation steps

Bring the milk to a boil slowly over medium heat in a large pot while stirring. Stir in the lemon juice and remove from the heat as soon as the whey separates from the white curd. If this does not happen, after a few minutes stir in a little more lemon juice. Pour the curd through a fine sieve and let drain for about 1 minute. Rinse with cold water. Loosen with a spoon, then drain well.

Remove the curd to cheesecloth-lined strainer. Twist the top of the cloth and squeeze out the liquid from the curd vigorously. Place the cloth with the cheese in a shallow bowl, and press the cheese out into a disc about 2 cm (approximately 1 inch) high. Fold the cloth back over the cheese and place a chopping board or plate on top. Weight to compress as much as possible using cans or similar heavy objects. Set overnight in the refrigerator, making sure to have a vessel underneath to catch liquid as it comes out of the cheese.

The next day, loosen the paneer from the cloth and cut into pieces. This can now be used to make Palak Paneer (Indian spinach with cheese).
