600 grams Chicken breasts
½ tsp Coriander
½ tsp Cumin
4 Tbsps vegetable oil
1 garlic clove
3 centimeters fresh ginger
1 Tbsp red Curry paste
100 grams Mango chutney
1 Tbsp Lime juice

Preparation steps

Rinse the chicken breasts, pat dry and cut into strips. Crush the coriander seeds with the cumin in a mortar, and mix with 2 tablespoons of oil into the chicken breast strips. Cover and let marinate for about 1 hour in refrigerator.

For the sauce, peel the garlic and ginger, and finely chop. Saute together in a pan in remaining oil with the curry paste for 1-2 minutes. Add the mango chutney and 3-4 tablespoons of water. Let simmer for about 5 minutes, and season with lime juice and salt.

Season the chicken breast strips with salt, and fry in a non-stick pan for 3-4 minutes.

Serve the chicken breast strips with the sauce and serve with rice as desired.
