½ Cantaloupe (seeds removed)
½ Charentais melon (seeds removed)
¼ Watermelon (seeds removed)
¼ cup lemon juice
2 Tbsps sugar

Puree the rest of the melon flesh and mix with well chilled buttermilk or sparkling white wine for a refreshing summer drink.

Preparation steps

1.
Line a large tray with non-stick baking paper.
2.
Using a melon baller, scoop out balls from the melon flesh.
3.
Mix the lemon juice and sugar with a little water and gently stir in the melon balls until coated with sugar.
4.
Thread the melon balls ( alternating the colours) on wooden skewers and place on the tray. Freeze for at least 3 hours.
5.
Remove from the freezer about 5 minutes before serving and arrange on a serving plate.
