400 grams Pastry flour or 200 grams of flour and 200 grams durum wheat semolina (plus more for the work surface)
4 eggs
½ tsp salt
1 Tbsp olive oil

Preparation steps

1.

Mix together the flour, egg, salt and oil until smooth and pliable, shape into a ball, cover with a cloth and let stand 30 minutes. (If necessary add some flour or some water).

2.

Thinly roll out the dough on a floured surface (or roll with a pasta machine). If using the pasta machine, cut the dough into ribbons, or with a knife, cut the dough into strips.

3.

Spread the pasta out on a floured kitchen towel and let dry several hours, turning occasionally so the noodles dry evenly.

4.

Cook the pasta in plenty of boiling salted water until al dente, 1-3 minutes.
