Preparation steps

1.
In a large mixing bowl, combine sugar, flour, corn starch and salt.
2.
Slice softened butter into chunks and add butter and vanilla to the bowl with the dry ingredients.
3.
Using your hands or a wooden spoon, combine the butter, vanilla and dry ingredients until well incorporated. The texture should be crumbly and sand-like not a smooth dough.
4.
Turn the mixture out onto a half-sheet baking pan (18" x 12" x 1"). Use your hands to spread the mixture evenly in the pan. Firmly pressing the mixture down with your fingers.
5.
Use a fork to prick the entire top of the cookies. Position oven rack in the center of the oven. Bake for 40 minutes at 325º F. Reduce heat to 300º F and continue baking for 20 minutes, or until light golden brown around the edges and across the center.
6.
Remove cookies from oven and sprinkle with granulated sugar. Cool in the pan for about 10 minutes before cutting into 3" x 1" strips with a sharp knife. Allow cookies to cool completely before serving.
