½ cup butter (at room temperature)
1 cup granulated sugar
2 large eggs
2 ½ cups all-purpose flour
2 cups Coconut flakes (desiccated)

Preparation steps

Preheat oven to 350º F. Line a large baking sheet with cooking parchment paper.

Cream butter and sugar together in a mixing bowl until smooth and creamy. Beat in the eggs until mixture is light and fluffy. Add flour and coconut, stirring until a soft dough forms.

Roll a spoonful of dough into a small ball and place on prepared baking sheet 2-inches apart. Repeat until all the dough is rolled. Flatten the balls slightly with the back of a spoon. Sprinkle lightly with sugar crystals.
4.
Bake for 12 to 15 minutes, or until cooked through and golden. Cool cookies for several minutes on the baking sheet. Transfer to wire racks to cool completely. Serve.
