- 80 grams softened butter
- 100 grams sugar
- 1 packet Vanilla sugar
- 1 pinch salt
- 1 egg
- 2 egg yolks
- 1 tsp grated Lemon peel
- 2 drops Bitter almond oil
- 200 grams Pastry flour
- 50 grams ground almonds
- 1 tsp Baking powder
- coarse sugar (for dusting)
Preparation steps
1.
Mix the butter with the sugar, vanilla sugar and salt until creamy. Add the egg, 1 egg yolk, lemon zest and bitter almond oil. Mix the flour with the almonds and baking powder and knead into the egg-butter mixture.

Shape the dough into 2 rolls, each approximately 20 cm (approximately 8 inches) in length. Wrap in plastic wrap and refrigerate for 2 hours.

Preheat the oven to 180°C (approximately 350°F).

Cut the rolls into 2 cm (approximately 3/4 inch) thick slices, roll them to 10-15 cm (approximately 4-6 inches) long strands and shape into pretzels. Place on a baking sheet lined with parchment paper.

Mix 1 egg yolk and 1 teaspoon water. Sprinkle the pretzels with sugar and bake 10-12 minutes.
