4 Sole fillet
8 fresh Sage
8 slices Parma ham
¾ cup Mozzarella (thinly sliced)
1 clove garlic cloves (crushed)
2 Tbsps Parmesan (grated)
salt (to taste)
flour (for dusting)
freshly ground Black pepper (to taste)
4 Tbsps butter
½ cup white wine
mixed salad (to serve)
1 lemon (slice; to garnish)
olive oil (for drizzling)

Preparation steps

1.
Place fillets between two pieces of plastic wrap and gently pound to flatten.
2.
Lay two sage leaves on top of the fish fillets, followed by Parma ham and sliced mozzarella.
3.
In a small bowl, combine garlic, Parmesan cheese, salt and pepper. Spread this mixture over the prepared fillets. Roll each fillet and secure with a wooden toothpick or skewer. Dust each fillet lightly with flour.
4.
Gently heat the butter in a skillet, when foaming, add the rolled fish fillets and cook until golden. Add the wine and let it reduce.
5.
Serve on a bed of salad greens with lemon slices. Season with cracked pepper and drizzle with olive oil.
