1 lemon (juiced)

Preparation steps

Rinse the plums, cut into quarters, and remove the stones. Mix the plums with the sugar, cinnamon, and lemon juice in a large roasting pan. Let marinate for 2 hours.

Preheat the oven to 150°C (approximately 300°F).

Place the roasting pan into the oven, and cook for 2-3 hours. Stir every 20-30 minutes to ensure the jam doesn't burn. Once the jam has thickened, remove the cinnamon and coarsely puree the jam with an immersion blender. Fill the prepared jars, seal tightly, and cool completely.
