- 22 ozs potatoes
- 4 Tbsps White vinegar
- 5 Tbsps Vegetable broth
- 5 Tbsps olive oil
- salt
- freshly ground peppers
- 1 bunch fresh Dill
- 1 bunch parsley
- 1 bunch scallions
Preparation steps

Cook potatoes in their jackets. As desired peel and cut into quarters. For the sauce, stir together vinegar, broth and oil and season heartily with salt and pepper. Rinse dill and parsley, spin dry and pluck off the leaves.

Trim scallions, rinse, cut diagonally into thin rings. Add dill, parsley and scallion rings to sauce. Drizzle the still-warm potatoes with the sauce and let soak for at least 15 minutes.
