Herb Salad with Flowers
For the dressing, peel shallots and cut into tiny cubes. Mix mustard in a bowl with vinegar and oil until smooth. Add shallots, stir and season with salt. Rinse chives and cut finely. Add chives to the bowl and toss with salad dressing.
Rinse watercress, shake dry and remove coarse stems. Carefully rinse nasturtium leaves, remove stems and cut larger leaves in half. Rinse dandelion, pat dry and cut into smaller pieces. Rinse remaining herbs, pat dry and pluck leaves from stems. Mix prepared salad ingredients in a bowl and then mix with the salad dressing. Decorate with nasturtium flowers and serve.
