6 ⅔ cups floury potatoes (peeled and quartered)
6 Tbsps olive oil
2 sprigs rosemary (leaves stripped and chopped)

Preparation steps

1.
Heat the oven to 220C (200C fan) 425F, gas 7. Put the oil in a shallow roasting tin and heat in the oven.
2.
Put the potatoes in a large pan of salted water and bring to a boil. Boil for 5 minutes then drain well, return the potatoes to the pan and shake hard with the lid on to roughen the edges of the potatoes.
3.
Transfer the potatoes to the roasting tin, coat them with the hot oil, season with salt and pepper and roast for 30 minutes.
4.
Carefully remove the tin from the oven, turn the potatoes and sprinkle over the chopped rosemary leaves. Return to the oven for 10 minutes or until the potatoes are golden brown.
