- ¼ cup vegetable oil
- 4 lamb shanks (trimmed)
- 8 shallots (cut into wedges)
- 4 carrots (sliced)
- 2 cloves garlic cloves (sliced)
- 2 tsps hot paprika
- 2 cups lamb stock
- ½ cup dry sherry
- ⅔ cup Golden raisins
- 2 inches Cinnamon stick
- Chili flakes
- 2 Tbsps Pistachio (shelled)
- salt
- freshly ground peppers

Preparation steps
1.
Heat the oil in a casserole dish set over a moderate heat until hot. Season the shanks with salt and pepper, and seal in the hot oil until golden all over.
2.
Transfer to a slow cooker, add the vegetables, paprika, stock, cherry, sultanas, cinnamon, and a pinch of chilli flakes.
3.
Cover with a lid, and cook on low for 8 hours until the meat is coming away from the bone.
4.
Season to taste with salt and pepper and serve with a garnish of chopped pistachios.
