3 Tbsps butter (softened and divided)
4 slices Whole Wheat Bread
8 Quail egg (may substitute 4 hen's eggs)
salt (to taste)
freshly ground Black pepper (to taste)
1 red Bell pepper (washed; deseeded and cut into quarters)

Preparation steps

Butter bread slices on both sides. Using a heart-shaped cookie cutter, cut a 2-inch heart in the center of each slice of bread.

Preheat griddle over medium heat. Place buttered bread slices on griddle and toast lightly on one side. Turn the bread slices over; drop a dab of butter into the center of the heart-shaped hole. Crack the eggs into a small bowl and gently pour the eggs into the heart-shaped hole. Repeat the process with the remaining slices. Season with salt and pepper. Cook eggs until desired doneness.

Using the heart-shaped cookie cutter, cut 4 hearts from the red pepper quarters.

Divide the toast and eggs between 4 serving plates. Garnish with red pepper hearts. Serve.
