4 cups Pork (topside, sliced)
1 clove garlic cloves (minced)
½ cup onions (diced)
1 cup Bell pepper (red, yellow and green, chopped)
cup Zucchini (sliced)
½ cup Snap pea (halved)
1 red chili pepper (cut into thin rings)
¼ cup black Olives (pitted)
3 Tbsps olive oil
1 tsp ground, sweet paprika
cup Meat stock
1 Tbsp chopped Fresh herbs (parsley, rosemary, thyme)
salt
freshly ground peppers
For the herb rice
1 Tbsp olive oil
½ cup white onions (diced)
1 clove garlic cloves (minced)
1 ½ cups Long grain rice
2 cups vegetable stock
2 Tbsps chopped parsley
1 Tbsp chopped Chervil
2 Tbsps snipped Chives
1 Tbsp chopped Tarragon
1 Tbsp chopped Basil

Preparation steps

1.
Heat the oil in a large frying pan, season the meat with salt and pepper, and fry a few pieces at a time. Remove the meat from the pan.
2.
Add the onion and garlic to the pan, and fry until soft. Add the remaining vegetables, fry together briefly, and then return the meat to the pan and sprinkle with paprika.
3.
Add the meat stock, sprinkle with herbs, and braise for 10 minutes over a low heat, until the pork is cooked through and the sauce has thickened slightly. Season to taste as necessary.
4.
For the rice: Heat the oil in a pan and sweat the onion and garlic until soft, but not brown. Add the rice and sweat for 2-3 minutes.
5.
Add the vegetable stock, season with salt and bring to the boil. Cover with a lid and simmer for 20 minutes.
6.
Stir in the chopped herbs 5 minutes before the end of the cooking time and season again if necessary.
