This salad is rich in lean plant protein thanks to the beans as well as powerful fiber from the corn.
If you want to use frozen corn just steam it briefly, drain, and cool before adding to the salad.

- 4 cups canned mixed beans (rinsed and drained)
- 1 ½ cups Sweet corn
- 1 red Bell pepper (seeds removed, diced)
- ½ tsp ground oregano
- 1 Lime (juiced)
- 2 Tbsps extra virgin olive oil
- salt
- peppers
- To garnish
- chopped cilantro

Preparation steps

Put all the ingredients in a large bowl and mix well, seasoning to taste with salt and pepper. Cover and leave to stand for 1 hour.

Put into a serving bowl and sprinkle with chopped cilantro.
