Heat a griddle pan on the hob and cook the almonds for 2 minutes until they start to brown, then remove from the pan and reserve.

Heat 2 tablespoons of olive oil in the griddle pan until its spitting, then add the garlic to the pan and cook for 2 minutes until it softens, then add the chicken to the pan. Saute for 3-4 minutes and then turn the pieces over so that they evenly brown and cook for a further 3-4 minutes until chicken is cooked through and tender. Remove from the pan and keep warm.

Add a little more olive oil and then sauté the courgettes until they start to brown, then add the broccoli and sugar snap peas and whole cherry tomatoes and saute until they become tender but not overcooked (3-4 minutes).

Add the chicken back to the pan to heat through for a minute then remove the pan from the heat.

Arrange 4 serving dishes and divide the baby spinach leaves between the dishes. Serve the sautéed vegetables on a bed of baby leaf spinach.
