2 cups boneless Chicken thigh (diced)
1 head Broccoli (separated into florets)
2 carrots (peeled and sliced)
2 cloves garlic cloves (finely sliced)
1 tsp fresh ginger (grated)
½ bunch scallions (finely sliced)
2 cups Mushrooms (sliced)
4 cups Bean sprout
0.333 cup soy sauce
2 Tbsps Oyster sauce (or hoisin sauce)

Preparation steps

1.
Heat the oil in a wok until nearly smoking, then add the chicken. Stir fry over a high heat until golden all over and the fat crisp. Remove from the pan with a slotted spoon.

Meanwhile steam the broccoli florets and carrots for 2 minutes, then remove from the heat.
3.
Add the spring onions, garlic and ginger to the wok and stir fry for 2 minutes. Add the remaining vegetables including the broccoli and carrots and cook until crisp-tender.
4.
Add the meat back to the pan and stir in the sauces. Leave to bubble for a few minutes then check and adjust the seasoning if necessary.
5.
Serve immediately.
