Ingredients

For the dough
1 cube fresh Yeast (42 grams) (approximately 1 1/2 ounces)
600 grams Pastry flour
1 tsp salt
60 milliliters olive oil
Pastry flour (for dusting)
For the topping
vegetable oil (for the baking sheets)
300 grams cooked ham (sliced)
1 can Pineapple (850 ml) (approximately 3 1/2 cups)
400 grams peeled Tomatoes (canned)
1 Tbsp Tomato paste
freshly ground peppers
200 grams freshly grated Cheese (such as Gouda)
1 Tbsp dried oregano

Preparation steps

For the dough: Dissolve the yeast in 300 ml (approximately 1 1/4 cups) lukewarm water. Combine the flour and salt in a bowl, make a well in the center, add the yeast mixture and oil and mix until smooth. Turn out onto a lightly floured work surface and knead for about 10 minutes, until smooth. Return to the bowl, cover and let rise in a warm place for about 1 hour.

Meanwhile, grease 4 baking sheets with oil. Cut the ham cut into 2 x 2 cm (approximately 3/4 inch) cubes. Drain the pineapple. Purée the tomatoes and season with salt and pepper. Preheat the oven to 200°C (approximately 400°F). Knead the dough on a lightly floured work surface and divide into 4 equal portions. Roll out thinly, with slightly thicker edges, and transfer to the prepared baking sheets.

Brush the dough with tomato sauce and top with ham and pineapple. Sprinkle with cheese and oregano, season with pepper and bake until golden brown, around 20-25 minutes. Remove from the oven and serve immediately.
