1 bunch white Asparagus
1 bunch green Asparagus
2 Tomatoes
4 Tbsps sunflower oil
1 tsp sugar
3 Tbsps lemon juice
salt
peppers
300 grams mixed Lettuce (such as Oakleaf, rocket, Lollo Bionda)
300 grams Smoked ham
1 scrap Horseradish (about 10 cm length)
Chervil (for garnish)
Chives (for garnish)

Preparation steps

1.

Peel white asparagus. Cut woody ends from all asparagus, rinse spears and slice diagonally. Drop the asparagus pieces in boiling water, bring to a boil again, drain in a colander, rinse in cold water and drain.

2.

Rinse the tomatoes, cut in half, remove seeds and dice.

3.

For the dressing, whisk together the oil, sugar and lemon juice. Season with salt and pepper.

4.

Trim lettuce, rinse, spin dry and pluck small. Arrange with asparagus, diced tomatoes and smoked ham slices on plates.

5.

Peel fine curls of horseradish with a peeler and arrange on the salad. Garnish as desired with chervil or chives and serve dressing alongside.
