750 grams green Asparagus

12 slices ham (such as Black Forest)

Preparation steps

Cook the eggs for 10 minutes, rinse in cold water and peel. Halve the eggs. Mash the egg yolks, vinegar, oil and mustard. Stir in the chives and season with salt and pepper. Chop the egg whites finely and fold into the mixture.

Rinse the asparagus. Peel the lower third of the green asparagus. Peel the white asparagus entirely. Cut the rods in half. Bring 1 teaspoon of salt, lemon juice and sugar to a boil. Add the white asparagus and cook for about 15 minutes, until al dente. Cook the green asparagus for 6-8 minutes. Drain well. Serve the asparagus with the ham and eggs.
