These cute, pumpkin cookies are not exaclty healthy, but it always important to treat yourself every once in a while, especially on a holiday! The cookies contain energizing carbohydrates as well as organce juice and zest, which provide vitamin C. 

You can also make other fun shapes with this and use other colors. You could make a bat, skeletons, candy, etc. 

Ingredients

½ cup unsalted butter
½ cup caster sugar
2 tsps grated Orange zest
1 tsp Orange juice
1 egg (beaten)
2 cups all-purpose flour
To decorate
3 ¼ cups powdered sugar
water
orange Food coloring
½ cup green Fondant

Preparation steps

1.

For the cookies: Heat the oven to 375°F. Line a large baking tray with non-stick baking paper.

Beat the butter and sugar together in a bowl until soft and light.

Beat in the egg, orange zest and juice, a little at a time, until blended.

Stir in the flour and mix to a dough.

Roll out the dough out on a lightly floured surface to a thickness of 1/2". Using a cookie cutter or card template, cut pumpkin shapes out of the dough and place on the baking tray.

Bake for 8-10 minutes until cooked through. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.

To decorate: sift the powdered sugar into a bowl and beat in just enough water to give a thick consistency. The mixture should be thick enough to coat the back of a spoon. Stir in a little orange food coloring.

Spread the icing over the cookies, leaving the' stalk' un-iced and leave to set.

9.

Cut small pieces from the fondant and shape into stalks. Press onto the top of the cookies.
