Olives (25, black and green, pitted)
50 grams caperberry (from a jar)
2 Tbsps Orange peel (grated)
3 Tbsps olive oil
4 Tbsps sherry

4 Halibut (Steaks, each about 150-200 grams)
800 grams potatoes
½ bunch thyme

Preparation steps

Peel potatoes and cook in boiling salted water.

Cut tomatoes in half, remove seeds and dice. Peel garlic and finely chop. Rinse basil, shake dry and coarsely chop. Cut olives into slices. Dissolve saffron in 4 tablespoons warm orange juice. Mix olives, capers, tomatoes, basil, garlic, 1 tablespoon orange zest, sherry and 1 tablespoon oil. Preheat oven to 200°C (approximatley 400°F). Season halibut with salt and pepper, drizzle with a little orange juice and place in a greased baking dish. Season tomatoe mixture with salt and pepper and spread on top of halibut. Cover baking dish with aluminum foil and bake for about 30 minutes. When 10 minutes remain, press potatoes through a ricer and mix with remaining orange juice and orange zest. Season with salt, pepper and thyme to taste. Serve halibut with vegetables and mashed potatoes. Garnish with thyme.
