1 Red Bell pepper
3 stalks Celery
5 Tbsps vegetable oil
2 Pastry flour
4 garlic cloves
4 lemon juice
Worcestershire sauce (to taste)
Tabasco sauce
2 bay leaves
1 tsp fresh thyme
salt
freshly ground peppers
300 grams Okra
3 scallions
½ bunch parsley
250 grams shrimp (peeled, cooked)
100 grams trimmed Crabmeat
250 grams kitchen-ready mussels
200 grams Chicken breasts (cut into bite-size pieces)

Preparation steps

1.

Rinse and finely chop the celery and peppers.

2.

Peel the onions and dice finely.

3.

Heat oil in a large saucepan, add flour and fry (but do not burn) while stirring until dark.

Stir in the diced vegetables. Peel the garlic and squeeze through a press into the pan.

5.

Pour in 700 ml of hot water (approximately 3 cups) and season with lemon juice, Tabasco, bay, thyme, Worcestershire sauce, salt and pepper.

Cover and simmer for 30-40 minutes on low heat.

Rinse the okra, remove the stems and tops and cut once. Mix the okra in with the other vegetables and remove the bay leaves. Cover and simmer for 30-40 minutes on low heat.

8.

Rinse the scallions and cut into thin rings. Rinse the parsley, shake dry and chop finely. Add the scallions and parsley to the pan with the crab meat, mussels, chicken and shrimp. Cover and simmer for 10 minutes over low heat. Remove any closed mussel shells.

9.

Season the gumbo with salt, pepper, Worcestershire sauce and Tabasco to taste. Goes well with rice.
