16 jumbo shrimp (shells intact)
2 cloves garlic cloves (peeled and finely chopped)
2 Tbsps fresh lemon juice
5 Tbsps good quality olive oil
1 small, red chili pepper (rinsed; cut lengthwise in half and seeded)
1 Tbsp fresh cilantro (finely chopped)
salt (to taste)
freshly ground peppers (to taste)
1 fresh lemon (cut into wedges)

Preparation steps

1.
Set up grill for direct grilling and preheat to moderately hot heat.
2.
Rinse shrimp under cold running water and pat dry with paper towels. Set aside.
3.
In a small bowl, combine garlic, lemon juice, olive oil, chili pepper, cilantro, salt and pepper. Stir to thoroughly combine.
4.
Thread 4 shrimp onto each skewer. Brush both sides of the shrimp with the prepared marinade. Cook for about 3 to 4 minutes on each side, or until shrimp are pink and cooked through. Brush with marinade frequently.
5.
Transfer shrimp to a servings platter and drizzle with lemon juice at the table before serving.
