Preparation steps

1.

Rinse the trout and pat dry. Peel garlic and chop finely. Cut lemon into thick slices about 0.5 cm (approximately 1/4 inch). Spread mayonnaise on fish. Place garlic, lemon slices and herbs in the abdominal cavities. Cover with plastic wrap and refrigerate about 4 hours.

Preheat the grill. Place soaked apple wood chips in a foil bag or folded aluminum foil, fold to seal and pierce all around. Place on the grill and close the lid until smoke forms.

Place the trout in an oiled grill basket and place on the hot grill. Cook for 6-8 minutes with the lid closed. Turn fish over and grill on the second side until golden brown, 6-8 minutes.

Depending on the size of the fish, cooking time may vary slightly.

If desired, serve drizzled with a little herb oil.
