- juice of lemons

- 300 grams mixed Vegetables (in fine strips)

- freshly ground peppers

Preparation steps
1.
For the sand eels, rinse eels, pat dry and sprinkle with lemon juice. Let rest about 15 minutes.
2.
For the lemon butter, melt butter in a small pan and stir in lemon juice.
3.
Grill eels over a hot grill for about 3 minutes on each side. Drizzle on oil as needed.
4.
Season sand eels with salt and pepper, arrange on the vegetables and serve with lemon butter and lemon wedges if desired.
