- 200 grams Israeli or pearl Couscous (Instant)
- 200 milliliters Vegetable broth (boiling)
- 1 carrot
- 1 tsp Tomato paste
- 1 finely chopped garlic clove
- 2 Tbsps freshly chopped parsley
- salt
- freshly ground peppers
- 1 Salmon (about 1 kg, ready to cook)
- olive oil (for drizzling)
Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F). Combine couscous with the boiling broth, let stand for 5 minutes and fluff with a fork.

Peel carrot and finely chop. Add carrot to the couscous with tomato paste, garlic and parsley. Season with salt and pepper.
3.
Rinse the salmon and season with salt and pepper inside and out. Fill cavity with couscous and place on a parchment paper-lined baking sheet. Drizzle with olive oil and roast in a preheated oven for 25-30 minutes. Turn once carefully halfway through roasting.
4.
Place on a preheated platter and serve with barbecue sauce, if desired.
