2 centimeters fresh Horseradish
½ handful parsley
4 slices whole wheat cracker
1 generous pinch organic lemon zest
1 tsp lemon juice
salt
freshly ground peppers
1 generous pinch sugar
700 grams Pork tenderloin (ready to cook)
2 Tbsps olive oil

Preparation steps

Peel horseradish and grate finely. Rinse parsley and shake dry, pluck off leaves and chop finely. Crumble crackers finely and mix with horseradish and parsley. Season with lemon zest, lemon juice, salt, pepper and sugar.

Preheat the oven to 200 ° C upper and lower heat.

Rinse pork fillet, pat dry and cut into 8 approximately equal slices. Season with salt and pepper. Heat oil in a pan and sear on both sides. Remove from pan and place on a lined with parchment paper baking sheet. Spread with cracker mixture and bake in preheated oven at 200°C (approximately 400°F) for about 10-15 minutes.

Remove from oven, arrange on plates and serve with braised cucumber or kohlrabi, if desired.
