- 2 small, cooked Lobster
- 3 tablespoons Olive oil
- 1 half a slice White bread loaf
- 2 Mini Green pepper Fruit
- 2 Shallots
- 1 Garlic clove
- 1 half dried Tomato
- 20 grams freshly grated Parmesan
- 2 slices (Thin elongated) Flatbread
- 1 teaspoon fresh Thyme
- 2 tablespoons Butter
- 1 teaspoon Cayenne pepper
Brush the lobster with 1 tablespoon olive oil. Preheat the broiler and broil the lobster briefly, watching carefully. Cut the bread in half, top with mini green pepper, brush with oil and broil briefly, watching carefully.
Peel the shallots and garlic and chop finely. Finely dice the tomato. Combine the shallots, garlic, tomato and Parmesan. Brush the flat bread with the remaining olive oil. Spoon the tomato mixture on top and broil briefly, watching carefully.
Heat the butter, stir in cayenne pepper and add thyme. Cut the lobster with a large sharp knife into pieces. Arrange all the prepared ingredients on plates and serve.
