1 ½ kilograms Rack of lamb
2 garlic cloves
4 Tbsps olive oil
2 Tbsps lemon juice
1 pinch Red pepper flakes
5 sprigs thyme
250 grams Cherry tomatoes
salt
freshly ground peppers

Preparation steps

Rinse racks of lamb, pat dry and divide into approximatley 3-piece portions. Peel and crush garlic. Whisk with oil, lemon juice and red pepper, coat meat with the marinade. Add thyme and refrigerate, covered, for about 2 hours. Grill on the hot grill on indirect heat with a covered lid for about 20 minutes, turning over occasionally . Baste with marinade occasionally.

Rinse and halve tomatoes and add to the grill during the last 5-6 minutes, drizzle with oil. Season everything with salt and pepper and remove from the grill. Arrange on plates and serve.
