Preparation steps

Preheat the oven broiler.

Rinse tomatoes, remove stalks and cut into slices. Rinse spinach and spin dry. Cut goat cheese into four slices. Place half of bread slices on a work surface then cover with ham, tomatoes, spinach and cheese. Cover with remaining bread slices and fix with toothpicks. Brush bread with a little oil cook on each side under the preheated oven broiler, watching carefully, for 1-2 minutes until crisp.
