- ½ cup Canola oil
- ½ cup Lime juice
- 4 Tbsps brown sugar
- 2 Tbsps apple cider vinegar
- 2 Tbsps dried thyme
- 2 Tbsps soy sauce
- 1 Tbsp ground allspice
- 2 tsps ground cinnamon
- 6 cloves garlic cloves (peeled)
- 6 habanero Chili (stemmed and seeded)
- 8 scallions (washed and roughly chopped)
- 2 shallots (peeled and roughly chopped)
- 1 pc fresh ginger (about 1-inch; peeled and roughly chopped)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)
- 2 lbs Chicken wing (skin intact)
- Oil (to brush grill grate and rosemary)
- 6 sprigs fresh rosemary

Preparation steps

In the bowl of a food processor, combine all ingredients except the chicken wings, oil and rosemary. Pulse until mixture is smooth.

Rinse the chicken under cold running water and pat dry with paper towels. Place the chicken wings in a 9 x 13-inch baking dish. Pour the marinade mixture over the chicken. With clean hands, massage the marinade into the chicken. Cover chicken with plastic wrap and refrigerate for at least 8 hours or overnight.

Set the grill up for direct grilling and preheat to medium-high heat. Brush the grill grate with oil. Place the chicken on the hot grill grate. Grill until wings are golden brown and crisp on the outside and cooked through, about 8 to 10 minutes per side. Brush the rosemary sprigs lightly with oil and grill until fragrant, about 45 to 60 seconds. Transfer chicken and rosemary to serving platter. Serve.
