Grilled Chicken and Zucchini
- 4 Chicken breasts
- 1 teaspoon ground paprika (sharp)
- 1 tablespoon finely chopped Sage
- vegetable oil
- freshly ground peppers
- 1 zucchini
- heavy Aluminum foil
Season chicken breasts with paprika, sage, salt and pepper and coat with oil.
Trim zucchini, rinse and cut into 0.5 cm (approximately 1/4 inch) thick slices.
Brush a piece of heavy aluminum foil on one side with oil and place on the hot grill. Grill the chicken pieces on all sides about 10-12 minutes. Grill the zucchini slices on each side about 3-4 minutes. Drizzle with a little oil and season with salt and pepper.
For the BBQ sauce, stir ketchup into broth and season with a few splashes of hot pepper sauce, give. Mix with the onion rings in a bowl.
Distribute grilled chicken breasts with zucchini slices on a platter. Garnish with sage leaves and diced peppers and serve with the BBQ sauce.
