For the beef skewers
2 centimeters ginger
2 garlic cloves
2 Tbsps Peanut oil
800 grams Beef
salt

For the satay sauce
150 grams unsalted, shelled Peanuts
200 milliliters Coconut milk
2 Tbsps Peanut butter
½ tsp Curry powder
1 lemon (zested and juiced)
Red pepper flakes (for garnish)

Preparation steps

For the beef skewers: Peel the ginger and garlic and finely chop. Stir in the oil. Rinse the meat, pat dry and cut into bite-sized cubes. Mix with the garlic-ginger oil, cover and let marinate for about 2 hours in the refrigerator.

For the sauce: Toast the peanuts in a dry frying pan, let cool then finely crush in a mortar. In a saucepan, bring the coconut milk, peanut butter and curry to a boil. Stir in the crushed peanuts, lemon zest and lemon juice and boil, stirring occasionally, for about 5 minutes, until creamy. Let cool then pour into serving bowls and garnish with red pepper flakes.

Arrange the meat on soaked bamboo skewers, season with salt and pepper and grill for 8-12 minutes, turning occasionally. Serve with the sauce.
