- 1 onion (finely chopped)
- 1 large, white potato (peeled and diced)
- ½ tsp dried mint
- 3 cups frozen green pea (thawed)
- 4 cups vegetable stock
- ½ cup Whole milk
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the butter in a saucepan set over a medium heat until hot. Add the onion, potato, and a little salt, sweating for 7-8 minutes until softened.

Add the dried mint, stir well, and add the peas. Cook for 2 minutes, stirring occasionally.
3.
Add the stock, stir well, and cook until simmering.
4.
Pour the mixture into a slow cooker. Cover and cook on low for 4 hours, stirring occasionally.
5.
Puree the soup in a food processor or using an immersion blender until smooth.
6.
Stir in the milk and return the soup to the slow cooker, cooking on high for 10 minutes until hot. Season to taste.
7.
Ladle into soup bowls and garnish with more freshly ground black pepper before serving.
