Preparation steps

Rinse the asparagus, peel and cook until al dente in a little boiling water seasoned with salt, a pinch of sugar and 1 tablespoon lemon juice. Remove from the pan, rinse and drain well. Rinse the leaf lettuce, spin dry and cut into bite-size pieces. Rinse the scallions, trim and cut into 3 to 5 mm (approximately 1/8 inch) wide diagonal slices.

Cube the ham. Cut the asparagus into bite size pieces. Rinse the tomatoes and cut into eighths. Mix the remaining lemon juice, mustard, white wine vinegar and season with salt and pepper. Mix the lettuce, tomatoes, scallions, asparagus and ham together with the vinaigrette and transfer to plates. Serve sprinkled with chopped chives.
