- 2 kilograms green mussels
- 1 shallot
- 2 garlic cloves
- 2 Tbsps olive oil
- 400 grams crushed Tomatoes
- 100 milliliters fish stock
- 100 milliliters Red wine
- 4 thyme
- 1 tsp freshly chopped rosemary
- Sea salt
- cayenne pepper
- Basil (for garnish)
Preparation steps

Rinse the mussels thoroughly under running water. Remove the beards, and discard any mussels that are open.

Peel and finely chop the shallot and garlic. Heat the oil in a pan, and sauté until translucent. Add the tomatoes, stock, and wine. Simmer for 5 minutes, stirring constantly.

Add the mussels, thyme, and rosemary. Cover and cook for 8 minutes, until the mussels have opened. Season to taste with sea salt and cayenne pepper. Remove the thyme, garnish with basil, and serve.
