24 mussels
4 Tbsps Parmesan (freshly grated)
½ Red chili pepper (finely chopped)
2 Tbsps parsley (finely chopped)
20 grams butter
1 Tbsp Pastry flour
250 milliliters milk
peppers (freshly ground)
Nutmeg (freshly grated)

Preparation steps

Preheat the oven broiler. Rinse the mussels in some salt water, cover and cook for about 10 minutes. Gently shake the pot to open the shells, and dispose of any that do not open.

Crack the open shells and leave the meat in one half.

Melt the butter in a pan, sprinkle with flour and sauté briefly. Add the milk gradually while stirring, then bring to a boil. Boil quickly while stirring, then remove the pot from heat. Add the parsley, chile and parmesan and season with salt, pepper and nutmeg. Place the shells on a baking sheet and cover each with 1 teaspoon of the sauce. Place under the hot broiler for 2-3 minutes until mussels are golden.
