2 kilograms mussels
500 grams carrots
500 grams Leeks
500 grams Fennel
250 grams Celery
4 Tbsps olive oil
250 milliliters white wine
2 cans peeled Tomatoes (825 grams)
salt
freshly ground peppers
2 Tbsps sugar

Preparation steps

1.

Scrub mussels thoroughly under running water, removing all beards. Discard all broken and opened shells.  

2.

Rinse and peel vegetables as needed and chop very finely. Heat oil in a pan and saute vegetables for a few minutes. Add white wine and  tomatoes with their liquid to the pan and bring to a boil. Season with salt, pepper and sugar and simmer for about 10 minutes. 

3.

Add mussels to the sauce and cook, covered, for about 10-12 minutes, shaking pot occasionally. Remove mussels with a slotted spoon and discard all closed ones. 

4.

Arrange mussels with sauce on plates. Serve with fresh baguette, if desired.
