- Grilled Green Beans
- 2 sheets aluminum foil
- 4 cups Green beans (rinsed and ends trimmed)
- 1 Tbsp olive oil
- 2 cloves garlic cloves (peeled and minced)
- 2 sprigs fresh Dill
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ½ Tbsps water (more if needed)
- For Pickled Onions and Tomatoes
- 1 large Red onion (peeled and thinly sliced)
- 2 Tbsps Red wine vinegar
- 2 tsps dried oregano
- salt (to taste)
- freshly ground Black pepper (to taste)
- 3 cups cherry Tomatoes (rinsed; trimmed and halved)
Preparation steps

Prepare grill for direct grilling and preheat to medium.

Place prepared green beans on a sheet of aluminum foil large enough to fold and securely seal, may require 2 sheets.

Drizzle olive oil over the green beans. Sprinkle minced garlic over the beans and lay dill sprigs over top of beans. Season with salt and pepper. Add water and fold foil together at the top and sides to form a pouch. Gently shake from side to side to coat the beans.

Cook on the grill until tender crisp.

For Pickled Onions and Tomatoes:

In a medium bowl, combine sliced onions, vinegar and oregano. Season with salt and pepper to taste and set aside. About 5 minutes before serving add the halved tomatoes. Toss to coat. Serve on top of grilled green beans.
