- 800 grams fresh, thick Green beans
- 500 milliliters Vegetable broth
- 5 sheets gelatin
- 6 sheets Basil
- 50 grams Crème fraiche
- 300 milliliters Whipped cream
- salt
- freshly ground peppers

Preparation steps
1.
Open green bean pods and remove beans. Boil broth and cook beans for about 10 minutes. Shock in ice water and drain well. Set 250 ml (approximately 1 cup) of the broth aside. Remove tough outer skin of beans.

Soften gelatin in cold water. Squeeze out gelatin and dissolve in warm broth. Distribute about a third of the beans into 4 glasses. Pour broth over beans and chill for about 2 hours.
3.
Rinse basil and cut into fine strips. Puree crème fraîche, cream and remaining beans in a blender. Season with salt and pepper to taste, mix with basil and fill glasses with it. Chill until ready to serve.
